4.Cleaning and Servicing After Use

4.1 How to Clean and Rinse the Machine

After using the machine, be sure to clean the food material passing areas and blades with water or hot water (70℃ or lower).

!WARNING

  • To avoid serious injury, before cleaning, rinsing or disassembling the machine, stop the machine, turn off the circuit breaker (Refer to 2.4 on P.2-2), and disconnect the attachment plug.

!WARNING

  • Before cleaning and rinsing the machine, be sure to carefully remove the blade.

!WARNING

  • When handling the round blade and crosscutting blade assemblies, be sure to use the cutter holder.
  • Touching blade edges carelessly may cause serious injury.

!CAUTION

  • To avoid serious injury, before cleaning and rinsing the machine, be sure to remove the blade.

!CAUTION

  • When rinsing the machine with water, be careful to prevent water from splashing onto the motor, inverter box, and attachment plug.
  • If electric parts are exposed to water or moisture, insulation failure may occur, causing a short circuit or fire.
  • If any waterproof cap or seal is damaged, immediately replace it with a new one.

!IMPORTANT

  • Be sure to clean and rinse the machine after use of it. Rotten food material remaining in the machine may cause food poisoning.

4.1.1 Cleaning Procedure

  • ① Remove the discharge bucket, open the front door, and open the drum swing (refer to 3.8 through and 3.10).
  • ② Before cleaning, be sure to remove the blade.
  • ③ Wash out food chips and salt from the blade and dry it well.
  • ④ Sufficiently wash and clean the following components and areas:
    ・ Hopper, drum, and impeller
    ・Scraper, round blade shaft, and crosscutting blade shaft
    ・Inner and outer surfaces of chute and discharge bucket
    ・Inner and outer surfaces of front door

4.1.2 How to Remove Clogged Material from Blade Assemblies

Remove the remaining materials clogging the clearance between blades of the round blade and crosscutting blade assemblies as follows.

!DANGER

  • Never try to remove clogged material with bare hands.

Attach the cutter holder to the blade assembly and place it on a stable table. Then, remove the clogged materials with a nonmetallic spatula or an air compressor.

4.2 Lubrication

Apply a few drops of food processing oil to the round blade shaft and crosscutting blade shaft. (Refer to 3.13.2 on P.3-12.)

4.3 Blade Sharpening

!WARNING

  • When attaching/detaching the round blade assembly and the crosscutting blade assembly, be sure to use the cutter holder.

!WARNING

  • When attaching/detaching the blade assembly or when sharpening the blades, be careful not to touch the blade edge.

!CAUTION

  • Carefully handle the blades. Cracks or chips may become mixed in the processed food and lead to injury.
  • Never use a cracked or chipped cutter.

4.3.1 Blade Shape

4.3.2 How to Sharpen Blades

[ 1 ] Plain Blade

  • When a blade becomes blunt, grind the blade edge of the blade.
  • When the width of blade edge becomes more than 2 mm, sharpen the relief surface, and then grind the blade edge.
  • The plain blade grinding limit is 4 mm. If the blade edge is worn more than 4 mm, replace it with a new one.

For how to attach and detach the plain blade, refer to 3.13.3 [1] on P.3-12.

NOTE

  • Don’t set the blade edge surface toward the impeller side.

[ 2 ] Round Blade

For sharpening round blades, a grinding or sharpening machine is needed. You may send the round blade assembly to EMURA FOOD MACHINE CO. and request a sharpening for a small charge.
(The round blade grinding limit is 2 mm. If the blade edge is worn more than 2 mm, replace it with a new one.)

NOTE

  • Disassembly and assembly of the round blade assembly shall be done by EMURA FOOD MACHINE CO.

[ 3 ] Crosscutting Blade

  • When a blade becomes blunt, grind the blade edge of the blade.
  • When the width of blade edge becomes more than 1.5 mm, sharpen the relief surface, and then grind the blade edge.
  • The crosscutting blade grinding limit is 2 mm. If the blade edge is worn more than 2 mm, replace it with a new one.

NOTE

  • Don’t set the blade edge angle on the relief surface.

4.3.3 How to Store Blades

  • After sharpening, rinse the blade with water. Then, wipe up water, and dry the blade.
  • After drying it, apply the food processing oil (accessory) to the blade, and store it in the accessory box.
