4.Cleaning and Servicing After Use

4.1 How to Clean and Rinse the Machine

!WARNING

  • To avoid serious injury, before cleaning, rinsing or disassembling the machine, stop the machine, turn off the circuit breaker (Refer to 2.5 Power Supply), and disconnect the attachment plug.

!WARNING

  • Before cleaning and rinsing the machine, be sure to safely remove the cutter.

!IMPORTANT

  • Be sure to clean and rinse the machine before and after use of it. Rotten food material remaining in the machine may cause food poisoning.

!CAUTION

  • After each use of the machine, be sure to inspect the blade to make sure it is not chipped or cracked.

!CAUTION

  • When rinsing the machine with water, be careful to prevent water from splashing onto the motor, inverter box, touch switch, operating panel, attachment plug, etc.
  • If electric parts are exposed to water or moisture, malfunctions may occur, causing a short circuit or a fire.
  • If any waterproof packing or seal is damaged, immediately replace it.

NOTE

  • When cleaning the machine, be careful to prevent the cutter spindle box from getting wet; even a little moisture may cause bearing faults or other failures.

4.1.1 Cleaning Procedure

  • ① Before cleaning, remove the cutter.
  • ② Wash out food chips and salt from the cutter and dry it well.
  • ③ Remove the discharge bucket or front cover (refer to 3.8.3 and 3.8.4) and rinse it.
  • ④Open the hood disk (refer to 3.7.4) and rinse both the inside and outside of it with water.
  • ⑤ Remove the conveyor belts according to the following procedures, and clean both sides with a safe cleaning agent.  
  • ⑥ Eliminate food chips and dust from the gaps between the rollers and the conveyor frame, and clean those areas.
  • ⑦ Remove the roll cover and rinse it. For the attaching and detaching procedures, refer to 4.1.4.

4.1.2 Detachment and Attachment of Upper Conveyor Belt

For Detaching Upper Conveyor Belt

① Remove the tension spring.  
② Open the hood disk. (Refer to 3.7.4.)
③ Loosen the knob screw that holds the side plate on your side (right). Push the side plate (right) forward until it stops.  
④ Tilt the side plate (right) with its external surface facing downward, and draw it backward to remove it.

Remove the remaining materials clogging the clearance between blades of the round blade and crosscutting blade assemblies as follows.
⑤ Pull the lever stopper toward you to release the stopper, and then turn the lever counterclockwise by 90°.
⑥ Slowly push the drawing roller guide toward the hood disk side.
⑦ Remove the hinge pin (right) that supports the link arm.
⑧ Loosen the tie bolt and turn the link arm clockwise by 90°until it stops.

⑨ While pulling the conveyor belt toward the hood disk side, remove it.

For Attaching Upper Conveyor Belt

① To install the conveyor belt, the procedure is the reverse of the steps for detaching.  
② After installing the belt, adjust the tension and center the belt in accordance with 7.1

NOTE

  • When installing the belt, be careful not to put the belt on the thrust washer.
  • If the upper conveyor has been removed by detaching the side plate (left), be sure tocheck the engagement between the upper conveyor and the universal joint when attaching it again.

4.1.3 Detachment and Attachment of Lower Conveyor Belt

For Detaching Lower Conveyor Belt

Steps ① to ④ are the same as those mentioned in 4.1.2 (procedures for detaching the upper conveyor belt).
⑤ Remove the rearmost knob screw that holds the (opposite) side plate (left).  
⑥ While holding the lower right frame (R), pull the handle until it stops.

⑦ Turn the handle by 180°to align the notched portion of the lock shaft to the lock plate.  
⑧ Slowly fold and put down the lower right frame (R).


⑨ While drawing the conveyor belt toward the disk side, remove it by sliding it toward you.

For Attaching Lower Conveyor Belt

① To install the conveyor belt, the procedure is the reverse of the above steps.  
② After installing the belt, adjust the tension and center the belt in accordance with 7.1

NOTE

  • For removing the lower conveyor be sure to hold the lower right frame (R), while pulling the handle.
  • For attaching it, be sure to turn the handle to set the notch of the lock shaft to the opposite side of the lock plate, and then push the handle in.

4.1.4 Detachment and Attachment of Roll Cover

  • The roll cover is located under the mouth frame. Before cleaning the machine, remove the roll cover, and clean the back of the mouth frame.
  • For detaching the roll cover, open the front door, hold the lower side of the roll cover and remove it.
  • For attaching the roll cover, put the upper end of the roll cover into a V slot between the mouth frame and the hood disk’s front face, and push the lower side of the roll cover.

4.1.5 Detachment and Attachment of Apron

  • An apron (transparent cover) is installed to prevent processed food from splashing.
  • To attach the apron, put the mounting holes of the apron into latch nuts. To detach it, slightly lift and pull the apron. (The apron is included in the tool box.)

4.2 Lubrication

  • After cleaning the machine, apply a few drops of the machine oil to the bearings and gears, and then perform idling for about three minutes. That allows for a long service life of the machine. For the lubrication points, refer to 3.8.1.

4.3 Blade Sharpening

!WARNING

  • To avoid serious injury when attaching/detaching the cutter assembly or sharpening blades, be careful not to touch the cutting edge.
  • Remember to wear the included protective gloves when handling the cutters.

!CAUTION

  • Carefully handle the cutter. If a cutter cracks or chips, the chip may become mixed in the processed food and lead to injury.
  • Never use a cracked or chipped cutter.

4.3.1 Blade Shape

The blades used in the machine are called “NAGIHA (blade),” which was developed by EMURA through year’s of experience. They are designed to cut materials through the pulling motion of a kitchen knife.

4.3.2 How to Sharpen Blades

The cutter blades used in the machine are unique in shape, so carefully sharpen them by referring to the figure below.

4.3.3 Rectangular Blade for Strip Cutting, Sticking, and Rectangle Cutting

The optional rectangular blade should be sharpened in the same way as the standard blade.

NOTE

  • After sharpening, rinse the blade with water. Then, wipe off excess water, and dry the blade. Apply the food machine oil to the blade, and store it in a dry place.
